
Established in 1992 by Chris and Maria Tsatsaris, Baxter Valley Estate has grown into a vineyard that reflects the character and generosity of this area at the very top of the Mornington Peninsula.
Along the front drive you’ll find rows of Shiraz, Cabernet and Pinot, welcoming you in. Beyond that, on the back block, Cabernet, Merlot, Shiraz, Pinot, Chardonnay and Sauvignon Blanc continue to thrive — each variety shaped by the seasons and the soil beneath it.
Our grapes are hand picked and the winesare made on site so every step of the process involves our family & friends.
The wines can be purchased at the cellar door to take home with you or if you get in touch with us we can arrange free local delivery.
Lychee & apricots along with some lovely floral characters makes this delicious fresh white wine, perfect with lunch or a cheese platter.
Named after our Uncle John who is affectionately known as ‘Scooter’ – this wine is something a little different! A field blend of Chardonnay and Sauvignon Blanc – the SB takes the front seat with passionfruit on the nose and stone fruit on the palate whilst the Chardonnay balances it with crisp citrus, great acidity and a delicious buttery finish.
A gorgeous ruby red in the glass, this wine has dark orchard fruits of cherries and plums with a hint of nutmeg. It hasrich, firm & extended palate.
A lovely dry rose that has strawberries & guava on the palate and a slightly effervescent finish.
An elegant example of a cool climate pinot noir that is elegant and has delicious sappy cherry characters.
Delicious cedar on the nose and palate has berries, hints of menthol and some pleasant dusty characters. Pleasant tannins that are softened with the Merlot.
Aromas of pepper & plum with grilled meat in the background. Silky smooth blackberries & spice/liquorice – with a hint of white pepper spice. This wine spent 18 months in oak and with 20% new American oak it adds a hint of delicious vanilla and a lovely softening of the tannins.
